Denis-- Chris Weaver and John Engle have reported, on the OSList, on Open Space meetings that did not use a bulletin board, but instead had participants gather around the session-proposer and go off to the meeting place. But those were small meetings, and I think that for an OS of the size you describe you do need some place to post a schedule, so participants can return to it.
Plywood, tables-as-pinboards, or Lisa's rock garden would probably work--I would put it to the committee to come up with environmentally sound and workable suggestions. No reason why session posters can't be written on the back of used computer print-outs or other used paper, a recycling scheme that requires no re-manufacturing. I like the thought of an environmental organization convening an OS outside.
