You know, of course, that OWFS can't really "see" the 1821. It has no addressing capability. The "Thermostat" device is there as a potential placeholder.
So try "cat Thermosat/temperature" to read temperature. OWFS should send the temperature convert and then temperature read blindly and hope for a response.
For that reason, you really can't have other devices on the same bus with the thermostat.
Also, because switching out of thermostat mode requires controlling the Vdd and DQ lines, and pulsing at ~1usec, it can't be done purely with 1-wire control, so there is no way in OWFS to do it.

I do not know what is wrong, both ds1821 I own are brand new...
