Maybe I misunderstood. The issue I've had previously is sometimes when you add 
a new field to a form and promote it to SharePoint, all existing forms 
mysteriously show no data in the list. The data is still in the form, but it 
doesn't show in any of the list views.

SharePoint library that already has 100s of pre-existing submissions? And now 
you want to populate the field for all those submissions?

I would say Datasheet view is your best bet.
