If you have SharePoint Enterprise Edition, use Data Connection libraries. You'll need to copy and update the data connections form Dev to Prod the first time. After that it will all work automatically.
Alternatively, if you use a site collection backup/restore the first time, then the list GUIDs should remain the same, which means you should be able to redeploy your form between Dev/Prod, as long as you haven't added new lists (and potentially views). You can also modify the connection details manually in the InfoPath form by editing the manifest.xsf. It isn't as scary as it initially sounds.
