I agree - for instance from a recent thread on this list I found a driver/app that lets me use my cheap USB Logitech Quickcam Express on my iBook in X. I can't do that in 9.x at all. They also work well for low-end, low-bandwidth, servers. I was running MacDNS here just recently before I shut down a site. I also found a free mail server and a free group server that would work just fine on those older machines. Eventually I'll pass it on to someone else after I'm through with it. (Probably my daughter when she's old enough - provided technology hasn't totally outstripped it.) But then I also like playing with the 7300 (down right now while I mail-trade power supplies with someone off the swap list) which is being converted to an 8500 board as well as my old 540c PowerBook which I painted and need to re-paint.
