Why not report it as a 603? Simple, OS X was designed for G3-native machines, not our second-gen Power Macs. Therefore, it assumes that it would not be able to be installed on a 603/604-based system and assumes the processor to be a G3.
Even though Apple says that OS X will only run on a native G3 or G4 system, they bothered to include 603/604 code in versions up to 10.1.5 (so I hear).
