What you are looking for is called PowerPrint. It used to be sold by GDT then Strydent Software and has been discontinued. It has both a Mac serial to parallel adapter and drivers that work with well over 1000 printers and it supports your canon printer. Here is a link to general info on it:

There are a few copies on ebay and I am sure if you post a want to buy on the swap list you can find a copy. I have used that since running 6.0.8 on a Plus with an Okidata dot matrix through 8.6 on a 6100 with a variety of Lasers and it has always worked flawlessly for me.
