I have some PDF files that contain page numbers on each page. The PDFs were
created from scanned pages, so each PDF page is a graphic. I'd like to erase
the page numbers from each PDF page, but because the page numbers are part
of the graphic, I can't select just the page numbers to delete them.

If the entire page is an image, then you can use the Image Touchup tool to open that image up in Photoshop/Paint, etc. and then use the painting tools.

Does anyone know whether Acrobat or PitStop Professional (I have both
programs) have a tool with which you can cut out part of a graphic on a PDF
page?

If the data is vector/text, then PitStop can be used.
