I have some PDF files that contain page numbers on each page. The PDFs were
created from scanned pages, so each PDF page is a graphic. I'd like to erase
the page numbers from each PDF page, but because the page numbers are part
of the graphic, I can't select just the page numbers to delete them.
Does anyone know whether Acrobat or PitStop Professional (I have both
programs) have a tool with which you can cut out part of a graphic on a PDF
page?

There is a Quite product that allows you to put blank masks areas in a PDF file and flatten them.
I can't remenber if it's Quite Imposing or Quite A Box of tricks... see their demos at :
