Redistilling is a free fix for simple problems in certain workflows - such
as what this thread is all about - how to make a black and white PDF from a
full-color, CMYK flavor. It's a one-time deal. Once the print job is
finished, it's likely the PDF will never be used again, or used for another
purpose.

I took a 4-color ad with a Photoshop image and some text created in
InDesign, and redistilled it. The embedded fonts converted fine, and I was
still able to edit the text. I even created the PostScript on my Mac and
distilled the PS file on the PC. I could edit the text on either platform.
The image converted to grayscale - 300 dpi - just fine. 

In this case, and also free if I have an image editing program such as
Photoshop, I could have opened the image, converted it to grayscale, and
saved the image and the changed PDF.

PDF Optimizer does not change color space; PDF Enhancer costs $179.00; and
Pitstop is $500.00. Not everyone can afford to purchase every new tool and
piece of software offered. And not everyone has a need for more than a quick
fix. 

For those who have ongoing needs, and can afford the investment, I agree
with your assessment, and would add that Quite a Box of Tricks is a good bet
(and cheaper than Pitstop) for changing color space and downsampling.

Naturally, the best PDF is one that is made natively. In other words, it's
best to try to make any changes in the original file whenever possible.

         But it does NOT make redistillation any better - it is still the
WRONG WAY to apply corrective/adjustive changes to a PDF!

         Native PDF processing tools such as PDF Optimizer, PDF Enhancer,
QABOT, PitStop, etc. should be used instead so as to maintain the integrity
and fidelity of the original document.
