Those all expect an actual file as input.  Our PDFs are stored in BLOBs so do
you know of a product that can handle a stream from memory?

         Yes, that is the correct way to do it.  Assemble/append the 
documents on the server and then send over a single document.

         Sure, a number of them.  Depending on the OS of the server, the 
development/integration language you are using, etc.

         Look at products such as AppendPDF from Appligent, PDFToolkit from 
ActivePDF, iText, etc.
