As long as the voltage is correct, the higher mAh rated batteries will just
last longer.  They don't provide any more current to the load (winder or
whatever)than any other mAh rated battery at that same voltage. How much
current is drawn is determined by the resistance of the load and the voltage
of the battery.  How long they will provide that current depends on their
design rating in mAh.
