But that one red channel is adjustable, so its infinitely variable. What's more, one can adjust the tonality of the color original in other ways -- shadow/highlight, curves, selective color, color replacement etc. -- so almost any grayscale variation is possible.

Simulating the filters in Photoshop is easier than carrying a bunch of filters around, but you can only accurately simulate a limited range of filter effects. For example, you can buy a number of red filters that do different things to your photo, but there's only one red channel...
