one has all the controls that you can normally set on the camera, plus 
basic exposure controls. The advantage is you can change the settings on 
a per-image basis after the fact (rather than shooting in JPEG where you 
are stuck with the settings you picked). This isn't as good as a good 
RAW converter, but far better than shooting RAW+JPEG for getting good 
proofs.
