 Based on that assumption,
if I tried to make a living selling prints at a street fair, ether I,
or my self respect as an artist, would quickly starve to death.

i am a strong art (and craft) appreciator and often visit galleries and some street fairs in Denver (and when i travel); in general, i will not go to just any street fair because the "artistry" is much as you describe; at the better fairs (e.g. Cherry Creek Arts Festival), i still find that painting and photography are the most oft-debased art forms; something about the fair audiences means that success seems to pair with (artistic and personal) glibness

i find myself spending much longer in the booths of fabric, glass, ceramic, jewelry and other artists; still a mixed bag, but there's something about these other arts that allows more true creativity in the commercial context of a street fair; i am more often challenged by these artists' works

galleries are another matter; good ones keep truly interesting and challenging art coming, and painting and photography seem stronger in the gallery world; despite the many flaws of the gallery system, i would probably be much happier pursuing an art career through galleries
