I sold a lens to a guy in Canada last week and received 100% of the
purchase price in USD. I just asked him to send me the payment and gave
the the USD value. I'd assume that you could do the same. As a seller,
though, paypal charged me the processing fee.

It seems to me that when Paypal has to convert American dollar
payments to Canadian funds, I get dinged a few percent. I'm hoping to
avoid that by having the purchaser specify he is paying in Canadian
funds.
