If you use any food baits you need to watch for insect infestation, of course. 
And remember, with snap traps, keep reusing them, even after it has killed a 
mouse. Mice are less skittish when the trap smells like mouse (live or dead). 
They become familiar and are part of the environment. Mice are shy creatures, 
who follow their noses.

You also have to test different baits, to find out what one is the best for 
your situation.  At one museum we had mice who preferred dried meat.  Freeze 
dried taxidermy (ignoring my recommendations) and the mice developed the taste 
for meat.  We finally had to literally bake some hamburger onto the trigger. It 
worked.

If using snap traps, check them frequently. Empty them as soon as they catch a 
mouse - or it will attract insect pests.  If using quick catch/live traps (such 
as the Kness mentioned earlier in this thread), check them daily.  A trapped 
mouse will dehydrate and die within a day.

i am of the opinion that the slightly viscous product has a low inherent odor 
and "stink" is exaggerated in my view. But it could be, if you have the product 
longer in the heat (sun), that it eventually begins to stink.
Smells are basically very subjective. Old cheese or a dead mouse in the snap 
trap should in any case be the bigger problem ;-) ... than this professional 
bait from a pest control company

But Thomas is of course right, if you do without organic substances, you have 
fewer problems..

from what I understand from company representatives, the product Provoke has a 
safety data sheet and is formulated to be anti-allergenic, as it is also 
approved for pest control use in the food industry.
In my own practical experience, the bait smells very little when you put a drop 
in a professional (e.g. Kness) trap
