Hi All - Offering a dissenting view. These appear to me as brown banded cockroach, Supella longipalpa. This factsheet<https://njaes.rutgers.edu/fs1327/> from Changlu Wang at Rutgers shows the different life stages of the common domestic cockroaches, including the nymphs and adult you pictured. This identification fits with the collection site - this cockroach is not as closely tied to food waste as the German cockroach, and can have many distinct harborages. Treatment therefore requires a thorough inspection or more detailed monitoring to identify all the harborages for bait placement.

This is why some restaurants always have them as their providers do not do this and it needs to be specifically requested and monitored that they are doing such. Best treated by a professional. There are plenty of good gel baits available now to treat cockroaches in their harbourages e.g. Maxforce, Advion brands. Several registered as approved EU Biocides. Make sure your professional uses one of those rather than sprays or powders. Also make sure all food is removed from the affected area.
