I would go for a linux distribution that you are familiar with, or one that is well supported, or one that is targeted at your application. Probably in that order.
They'll all be using the same basic elements like LTSP and as you're a school I would be inclined to Edubuntu and it should also be good for support from Canonical (UK) or the growing xBuntu user base.
