Well, if I ran apps under OS X, they wouldn't be Ubuntu apps. :)
Mac OS X has X11 support, but you need to install it. Plus, I think cocoa
apps are more responsive in OS X than X clients.

For some reason though, Linux does seem more responsive than OS X on
the iBook. Maybe I'm just biased, but there have been documented
comparisons of OS X and Linux on the same box that show that Linux
outperforms OS X.
