If LDAP can do plain text  logging, this might be of help. If not,
think something like an LDAP proxy to sit in between authenticating
clients and the LDAP server, proxy will pass authentication to the
LDAP server while logging in clear text. Now all you need to do is
wait for all clients to authenticate at least once. This may not be
the most secure way but it's doable.

Note: I have not done any of this using LDAP. I've done a similar task
though using radius (migration and plain text logging). Good luck.
