You only need a serial port and a PC with a terminal emulator. (Coterm, Procomm Plus, Telix, etc...) I even wrote my own RT -- short for ROMterm -- a rommable VT52 terminal emulator in under 4Kb.

There is Foxpro for Unix...which run on Linux under iBCS2. On the other hand there is curses also. But why reinvent the wheel...it's been there...
Curses is still too low-level. You want to build on top of it (or better, on top of S-lang) to get more functional widgets like drop down combo boxes and the like. I don't believe in going as far as having resizable windows ala Turbo Vision though. If you need that, you might as well go graphical.
