Can't say much about the HOWTO documents (same gripes as you have), but
the online books about exim, Postfix and qmail (particularly 'Life with
qmail') are quite extensive in explanations. As for sendmail... avoid it
like the plague (its configuration is _not_ for the consumption of many
mere mortals:D)

I don't if it's just me, but I usually do this in this order:
1. Install and configure MTA to check if mail service works securely and
properly (not an open relay, etc...)
2. Place MX record in DNS when SMTP service already works
3. Install and configure POP3/IMAP server.

To test if the above-mentioned steps do work, you can employ telnet as
well as configuring the mail user agents.
