I think your purpose is probably best served by a file copying solution,
rather than a disk imaging one. I would suggest using cp -a.

If you insist on creating whole images, there are tools like partimage
<http://www.partimage.org/> and clonezilla which offer options to satisfy
the requirements you've listed.
