If memory serves, this topic has come up before and if I recall correctly, a few people mentioned Jitsi Meet and Jami for FOSS options. Even as someone with many years of paid & unpaid experience with Linux, IT support & LAN/WAN engineering, I'm not at all enthused about the idea of trying to set either up & get it working. Especially if the attendees are on a variety of different platforms. Why not just use some web hosted service like Google Meet or Zoho?
