Many thanks for replying so quickly. That does partially explain things, I don't think that is quite it. Whatever settings I try, from an album in the Music Folders, adding a single track never works. With all Play Modes, a short tap on a track always takes me to TrackInfo (just the same as "touch and hold), whereas from Albums, it works as it used to (i.e. a short tap on a track will simply add the track to the playlist.
