Could you send me a diagnostics mail from the office when it's not
workin? Just tap the mail link under "help". I wonder whether the
network detection doesn't work for some reason, although I use
Apple-provided code for that but that has been broken before....
What are your settings for WiFi and cellular? What do you see in the
server's web interface after playing a few tracks (it should show the
actual setting iPeng configures).

I know this works for others, too, not just me so it's definitely a
special case.
Do you use a VPN or a "normal" remote connection?
