I figured that. A couple of missionaries to Latin America were shocked when their help dug in the garbage for unwanted chicken parts. Also- bone marrow soup. I also make great soup thanks to my mother and my own efforts.. She told me I was Hungarian until I was in my late 20's then admitted I was half-Lebanese!// We are so distant from using the whole animal these days- I still love organ meats and head cheese and all those wonderful cuts during the age of butcher shops vs. stryofoam/ plastic coffins.
