Yup, there is. In Acrobat Reader 5, take a look at the preferences sub-menu in the edit menu. I think opening the full-screen preferences will allow you to create the settings you're asking for.
While you're at it, Acrobat 5 (on Linux at least) allows you to anti-alias line-art. Makes for a much better presentation. That's one of the other preference panes.
