Michael, The values are coming from the printer driver's PPD file (in /etc/cups/ppd). If you can write up a bug with your PPD files attached and steps to reproduce (as below), we'll be able to investigate and determine whether the problem is with the driver or some interaction with the Page Setup dialog.
