If on a PC, once you've typed in the e-mail/web address and it has turned 'linkified', you can then right click over the link and choose remove hyperlink from the menu. If on a Mac I'm afraid I don't know. Can you hold down the mouse button to get a similar menu? I don't know if you can permanently disable this feature. I'm not at my PC at the moment so I can't check for myself!
