Isn't that the concept behind a Linear RAW Conversion?
You used to be able to create them with Canon's software - not sure about the recent versions of this as I don't use it.


For the Mac there is also DCRAW <http://www.frostyplace.com/dcraw/index.html> which converts to Linear. I think the idea is you then use Fred Miranda (or similar) actions to convert them to normal viewing files.

There are also Actions that allow you to mix Linear and Normal RAW files to widen the dynamic range.

I am intrigued why you want to convert your files this way though...
