Not really More GCR (more black) in a separation will ensure neutrality, but
make it harder for the pressman to do colour adjustments to match something.

Not unless you use a Gravure printer. And if you do forget about the ECI
offset profiles which are for - you guessed it - offset <G>.

Gravure can routinely handle more ink, and frequently uses a lot less black
- this yielda more vivid colour. The inks are much more viscous (thinner)
and the dot's and priting process used in gravure is very different from
offset.
Don't mix up offset and Gravure profiles.

If it's an offset press one can simply build new profiles with appropriate
numbers based on the same dataset.

A revised profile will fix that - AND you will still be able to proof it
correctly. If you tweak the profile (or the file) proffing will likely be
off.
