Does the Sigma have its own camera control software? If so, what happens if you copy a file from the camera to the Mac via this software? Does Image Capture see the camera, if connected via USB or FireWire? If so, does Image Capture properly see the file creation dates?
I don't think it has camera control software - it's a bit of a toy - and I usually transfer all images from the CF card using a PCMIA adaptor, rather than connecting the camera.

These are usually MS-DOS file systems - and they don't understand the Mac's concept of a "File Creation Date".
Insert one into your Mac, click on it once and do "Get Info". Does the volume have a "Creation Date"? - I'm willing to bet that it doesn't, and neither will any of the folders or files on the volume.
You're right - no creation date and - inexplicably - modification date of 1 January 1980. It is formatted Macintosh PC Exchange (MS-DOS)
The crazy thing is, I use the same cards in both cameras. The Sigma creates its own folder to store files, whereas the Fuji needs to reformat a card (if it's been in the Sigma) before it will store anything. However the Fuji files then go on to retain their creation dates, and the Sigma files don't.
