You can have your cake and eat it! You simply need to buy the 110ml or 220ml Ultrachrome carts for the big Epsons and use them to refill your CIS bottles on your 2100/2200.
Or you can refill the 2100 carts with the Ultrachrome ink from the big carts, though the design of the carts makes it a bit tricky.

There is absolutely no point buying an Ultrachrome printer and installing a
CIS. The only reason for buying the Epson 2100 would be to have access to
Epsons Ultrachrome inkset - i.e. Long life etc
If you are going to install a CIS, buy the Epson 1290s.
