've been asked to produce two images suitable for a back-lit display. They both need to be around 1.5 metres x 1 metre and they will be illuminated for 8-10 hours per day on a permanent basis. I'm assuming a digitally produced image is now best for this. Any suggestions on the best material that will be resistant to fading? And does anyone know of anyone, or produce such film images themselves?

Find a good lab with a Lambda. They make almost perfectly clear film these days. It will be a good idea however if the lab can check the print in the same illumination used in the lightbox - so if at all possible make sure the lab has a working box available. On supplies many good labs will be able to help with having a box made as well.
