I've never had the need to do a custom map of controls but the process is quite 
straightforward, just as you've described. Now, you specifically mentioned Avid 
control surfaces in your previous message and that made me have a second 
thought about what I said. It's entirely possible that the custom mapping 
facility, which undoubtedly exists, is specific to supported control surfaces. 
I'm not certain whether that applies to generic MIDI controllers like keyboards 
with a bank of continuous controller sliders. Again, I've never had the need to 
set up anything along those lines so I might be mistaken about the current 
state of generic MIDI mapping. I should look into it for my own general 
knowledge.
