Andy,

sweetwater.com is a great place to buy. Depending on the channels I
think the Saffire Pro40 is a good start. It connects using Firewire,
has eight channel inputs, two outputs for speakers, two headphone
jacks, and consists of knobs for level controls and buttons for
phamtom powered microphones.
I also use an Axium keyboard, which uses a USB to plug into the
computer. As for the guitar hardware someone else will have to answer
that. Sweetwater customer service is remarkable. They've worked with
blind musicians before and if you describe what you need they will
most certainly match you up. Explain that you need the most hands-on,
knob and button oriented hardware and they be delighted to help. I do
not have any bad experience and everything I won, keyboard, control
surface, microphones etc are from them.
