For audio/music production, you probably won’t need any of the features in Ultimate/HDX so I wouldn’t worry about that. They have moved enough into regular pro tools over the years. Audio interface wise given that you are running an old “CheeseGrator” Mac Pro from the sounds of things, that pretty much eliminates any of the modern thunderbolt options which would of been your best best for high resolution and low latency. The USB versions of the Focusrite Clarett will probably be my recommendation in that regards. The Clarett 4 Pre is the sweet spot in the line up in my opinion.
