here at jabberfr we have can handle about 1000 simultaneous pymsnt users
on a dedicated server (1Go RAM).
with a good pc you can support lots of users, but maybe only about 250
simultaneous on the msn transport because of avatars and python load.
but, you can deactivate some features like avatars to increase
performance...
if you have lot of users, you should use a dedicated server to manage
transports to keep the jabber server safe
