Yeah, I haven't updated the build instructions for QGIS 3. It took me a while to get going on figuring out all the new stuff (I've had a lot of distraction the past year or so).
I don't have any published scripts for the official build. Mostly it's just following the build instructions (what they would be when I update them), plus a bundling script for the extras bundled in the app (not necessary for anyone installing from source). Thanks for the reminder that the instructions need updating.
