A good place to start might be:
http://www.marine-geo.org/tools/GMRTMapTool/  for the Global
Multi-Resolution Topography. You can save the grids out in a variety
of GIS-compatible formats.

There is also the GeoMapApp tool which does the same thing:
http://www.geomapapp.org/

The GeoMapApp gives you a choice of data layers, including high-res,
so worth looking into.
