Edit de LDAP entry and:
Put a mailForwardingAddress for every user to fordwar the mail
Put:
deliveryMode: localDelivery
optionaly if you want to reply with a message to the recipients of the mail
Put an aditional delivery mode:
deliveryMode: reply
mailReplyText: Sorry, I'm out of the office.(or similar)
After all yo have:
