My take on the choice of donor might be slightly different from most,
in that I want my cars to be reliable, practical, cheap to run, and
easy to fix.

When looking for a potential donor, I'd look for a donor range which
also includes at least one diesel engine, and also allows both manual
and automatic gearboxes.
(Not necessarily a diesel automatic, although this is my ideal
option.)

And one argument against the use of Japanese cars is the availability
of aftermarket tuning parts.

Given the above, how about going a little less left-field and looking
at Golfs or similar?  Plenty of choice over the whole range of donors
there.
Excellent diesels and petrols, choice of automatic and even tiptronic
boxes, plenty of tuning bits and chipping services available.
And as far as I know, the only other competitor for kit bits is Tiger
for the front suspension and a few seven copies for the radiators.

Just kicking ideas around,
