Thank you! My shell-foo is not that strong.
The xentop command will show you memory stats for dom0 and all the rest.
Yes, I know. The issue here is plain usability / clarity of the qubes
domain widget. It shows a list of VMs and used resources, so I'd expect
it to show _all_ used resources. It doesn't, since dom0-resources are
missing. My question here is how to show those resources without adding
clutter / confusion?
Right now my idea would be to simply add dom0. I don't like it because
it seems to add unnecessary clutter and confusion, since dom0 can't
behave like other VMs in that list. So I hope for a better solution here.
As for making more room on an 8GB system [...]
Tbh I think this should be part of the doc. Anybody expert enough to

I probably could, however im struggling to get it to work. got
dom0_mem=min:1024M and dom0_mem=max:1536M in /etc/default/grub, did grub2
install and verified new parameters appear in /boot/grub2/menu . did dracut -f.
verified the new kernel line at boot time (both values present and correct)
but dom0 still seems to chew up 4Gb regardless, according to free -m and xentop
Assuming your system uses grub, I think the place to check would be in
/boot/grub2/grub.cfg. Or you could press 'e' at the grub menu at boot
time to see if the parameters are correct.
OTOH, its possible it doesn't use grub (I think for UEFI boot) in which
case I don't know where the parameters go.
