Hi Jason,

You can defintately achieve your fitness goals even on
a veg diet it will just be a little harder.  I'm a
personal trainer and know of many vegetarian body
builders.  A good measurement for you would be 1-1.2
grams of protein per lb of body weight.  Now what will
be tough for you use is obtaining animal protein vs
plant protein.  So you must keep taking your protein
shakes "Whey protein" especially.  I would also invest
in amino acid tablets as well.  If you want to build
lean body weight then you must continue to take in
quality protein and carbohydrates.  Find out your reg
caloric intake for each day, and then up it
accordingly until you reach your desired body weight. 
During this process continue to do 20-30min cardio
sessions 3-4times a week and again seek out quality
foods.  It may be hard to reach 225 within a year with
out it being mostly fat, but anything is possible if
you work hard enough.  I also don't know your routine
but you really should be lowering your reps and
increasing your weight if you want to build bigger
muscles and thus increase body weight.  Doing high rep
workouts burns fat and body weight which will hamper
your body weight goals of 225.
