This I am serving tonite as an entree with a salad and corn on the cob for a 
side.

one small box (6 c.) mashed potato flakes
6 c. vegetarian broth
2 c. soy milk (unsweetened)
6 eggs (can be omitted if you are vegan, but I added for creaminess and a 
little more protein 
for my little girl)
approx. 1/3 to 1/2 c. rice parmesan
about 1 c. grated vegan gourmet cheddar
1 c. soy sour cream

mix together in large bowl - make sure it is a little wet as it will dry out a 
bit in the oven.  
pour into casserole dish - sprinkle with more parmesan or cheddar.   Bake at 
350 till hot - 10 
or 15 minutes (maybe more if it was refrigerated prior to putting in the oven).

Sorry I don't really use exact times or measures on some things...
