Well, to do this you're going to have to use standard music concepts like 
beats, measures, and the 12 notes per octave scale.
To give you an example, I did an arrangement of a traditional middle eastern 
tune called Ayazain for my early music group. It uses the masamoudi rhythm for 
percussion. Listen to it here:

We're going to have to get on the same page in terms before you'll be able to 
make any progress.
On an unrelated note, there is a Turkish musical instrument called the 
Crescent, a pole with a crescent shaped metal piece on top that has bells 
hanging off it. If you know a source for them, I'd appreciate that information.

What type of music are you trying to do?  I've done some dance rhythm stuff 
using traditional rhythms, and I also have some Sufi rhythms I've done as well, 
but you have to have the right sounds to do this, and it'll take a bit of 
searching. I use BassMIDI and sound fonts for my sounds in QWS, so  I had to 
find the right soundfonts to realize the music with the right sounds, and in 
some cases I've had to just use something close. (Like using a bassoon or
