The basic feature you are asking for is for the Undo function to hold more than just a track. At present, Undo works on storing a previous copy of a track and then if you ask to Undo, it simply replaces the current contents with the saved Undo. In order to restore a deleted track, or to be able to undo an operation that was Applied to All tracks, the Undo would have to store either a track, or series of tracks (i.e. a song). I've also had a suggestion that there could be several layers of Undo ... for the time being, you just have to be careful as there's only one.
