When I have this problem I just re-open the track. I also save after any
operation I'm happy with. I find that having only one level of undo makes me
pay far more attention to what I'm doing, so I'm more engaged with the song
or composition.

The basic feature you are asking for is for the Undo function to hold more
than just a track.
At present, Undo works on storing a previous copy of a track and then if you
ask to Undo, it simply replaces the current contents with the saved Undo.

In order to restore a deleted track, or to be able to undo an operation that
was Applied to All tracks, the Undo would have to store either a track, or
series of tracks (i.e. a song).

I've also had a suggestion that there could be several layers of Undo ...
for the time being, you just have to be careful as there's only one.
